Factors That Effect the Oxidation of Absorbic Acid

The purpose of our experiment was to determine which factors, absence or presence of pulp, light or dark environment, and type of juice, orange juice or grapefruit juice, had the greatest effect on the amount of ascorbic acid oxidized over a 24 hour period. Our three factor DOE gave evidence that environment type had the greatest effect on the oxidation of the ascorbic acid. With modest error, our data agrees with previous research that light increases the oxidation rate of ascorbic acid.
